Spinach Breakfast Omelette - Cycle 1

Another of my favorite meals. I made this even before I started on the 17 Day Diet and its a quick and easy and very filling high proteain meal.

 

Ingredients

  • 1 whole egg
  • 1/3 cup liquid egg whites (or 2 egg whites)
  • 1 tsp. olive oil
  • large handful raw baby spinach leaves
  • fresh Pico de Gallo salsa
  • lemon pepper seasoning (or salt and pepper)
  • 1 tsp shredded parmesan cheese

 

Add 1 tsp oil to a non-stick sillet and heat over medium for a few seconds.  Add the spinach leaves and saute until soft. Whip together whole egg with egg whites, then add to the pan. Let sit for 30 seconds or so then lift so that the uncooked egg flows under the cooked portion. Sprinkle with lemon pepper seasoning and turn heat off. Cover pan with a top and let sit for another 30 seconds or so until egg is cooked. Take off top, fold omelette over on itself and remove from pan to plate. Sprinkle on 1 tsp of parmesan cheese and top with 2-3 tablespoons pico de gallo salsa.  Serve with morning fruit and green tea or coffee.
