These are yummy!  Easy to pop out of fridge and mirowave on the go.  I usually eat with a little bit of salsa and sprinkle a bit more FF cheddar on top before heating.  Think I will try adding 4 oz of probiotic cottage cheese (whipped) to egg mix next time to see if it makes them creamier. I have heard of others improvising with spinach, mushroom and/or broccoli for a quiche like cup.  Will be interested in hearing other ideas.

 

Ingredients

 

  • 1/2 pound turkey sausage (jimmy dean already cooked in red pouch)
  • 6 eggs and egg whites (equivalent to 12 eggs)
  • 1/2 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1/2 cup FF shredded cheddar cheese

 

Directions

 

  • In a large bowl, beat eggs. Add the onion, green pepper, salt, garlic powder and pepper. Stir in sausage and cheese.
  • Spoon by 1/3 cupfuls into muffin cups coated with cooking spray. Bake at 350° for 20-25 minutes or until a knife inserted near the center comes out clean. Yield: 1 dozen.

I make these for my husband and I all the time. He eats two every morning and I have one… They’re delicious. The only change I’ve made is that I’ve added shredded spinch, yummm

Your not suppose to eat the turkey bacon/ sausage until cycle 2.

Hy me again, I just made sum of these this morning for brekkie, they’re wonderful. I did a fe changes, 

1 egg (yolk included)

2 tablespoons trim milk

Onion

Green capsicum

Mushroom

Courgette

1/4 cup Edam cheese (fat free)

No oil used, I used silicone muffin liners, no meat also as I didn’t have any available.

These made 4 half muffin liners.

I had 2 for brekkie

And amounts of veg I used were roughly 1/4 cup of each

Easy way to make sure it is Cycle 1 safe. Make your own ‘Sausage’. Brown ground turkey and siced onion. When almost done, start adding a little kosher salt and ground black pepper to taste. Also add ground or rubbed sage, and cayanne pepper to taste. Once I am close, I add Olive oil to give it that ‘greasy sausage’ taste. We use this as sausage and use it in several breakfast dishes. I do the egg muffins as well, and add the sausage to it before I pop them in the oven. Makes a great breakfast.
