Shepherd's Pie - Yummy - Cycle 1
1 Large Cauliflower
1 12 oz bag frozen mixed veggies – cook according to package
1. Bring a large pot of salted water to a boil. Add Cauliflower florets and cook until tender, About 15 minutes or so. Drain and cover with a lid to steam ‘dry’ and reduce any excess moisture – about 5 minutes. Add the Sour Cream, beaten egg (or egg white), finely chopped onion and 1/4 cup shredded cheese and beat until smooth. Season (lightly) with salt and pepper; set aside.
3. Heat oil in a large frying pan. Add onion and garlic and cook on medium low heat until soft – approximately 3-4 minutes. Add ground turkey and cook until well browned. Pour off excess fat, then stir in cornstarch and cook 1 minute. Add ketchup and beef broth. Bring to a boil, reduce heat and simmer for 5 minutes.
4. Spread the ground turkey in an even layer on the bottom of a 2 qart casserole dish that has been sprayed with Pam (either olive oil or butter flavored). Next, spread a layer of pre-cooked mixed veggies. Top with the mashed cauliflower mixture and sprinkle with remaining shredded cheese.
5. Bake in the preheated oven (375 degrees) for 20 minutes. Switch to High Broil and broil for approximately 5 minutes or until golden brown. Remove from oven and allow to rest for about 5 minutes before serving. Enjoy!
