another brussel sprout option is my lower calorie take off Ina Garten’s wonderful recipe. Wash spouts, trim. Mix with one tablespoon of olive oil, and generous amount of kosher salt. Place on a sheet pan and roast for 30-40 minutes in 400 degree oven until crisp on the outside and tender on the inside. Shake pan often so sprouts can brown evenly. These are so good, I can eat them like candy! I even like them cold the next day.

This is too funny!!! I thought I hated brussel sprouts, but saw it on the list of vegetables and there were some at my local grocery store cut in half and seasoned and decided to try them. I literally just finished eating them and they were delicious!! I added chicken breast and watercress and cooked in a tsp of light virgin olive oil. Excellent Supper!!!

Love BS! I started the diet yesterday and had chicken with the Steamfresh Bird’s Eye Brussel Sprouts for dinner. So easy to prepare. Just steam them in the bag in the microwave for about 4-5 minutes and they’re done. Biker Mama gave me an idea for my leftover brussel sprouts. Tonight, I put a little olive oil in a non-stick pan, added my leftover steamed brussel sprouts from last night, tossed in a green onion cut lengthwise with a little sea salt, and heated it all up for about 8 minutes. The onions caramelized a bit with the brussel sprouts and it was delicious! Did not taste like leftovers at all! Thanks to all who contribute. This message board is really helpful!

can’t see any reason why you can’t use kosher salt…I find that sometimes it just gives things a great flavor…have been using for 8 days, lost 7#’s…gotta love those roasted vegetables…

Here’s a one-skillet meal which works well for 1 person or for your whole family (just multiply the recipe by the # of servings).
Chicken with Brussel Sprouts
In a large frying pan sprayed with olive oil, place 1 boneless/skinless chicken breast in the center and put 1 cup of halved brussell sprouts, 1 small frozen tomato* and one small quartered onion around the edges. Sprinkle liberally with garlic chips or fresh grated garlic. Saute the chicken breast til done then slice it into bite sized pieces. Deglaze the pan with 1/4 cup of chicken boullion and add 1 cup of cauliflower florets.
By now the frozen tomato should have thawed so you can mix all of the ingredients together. Or, if you did not add a frozen tomato in step one, you can add a fresh tomato or 1/3 of a can of diced tomatoes at this point. Cook another 5-10 minutes til the cauliflower is done.
Add the juice of a small lemon and salt/pepper to taste.

Thanks! The brussel sprouts were really yummy. I couldn’t find citrus olive oil so I cooked them and added a little fresh lemon zest at the end. It was very good. I also have a recipe for oven roasted brussel sprouts and carrots:
1/2 pound baby carrots
1/2 pound brussel sprouts, trimmed (can be cut in half if you like)
1 Tbsp. olive oil
1/4 tsp. kosher salt (or sea salt)
1/4 tsp. freshly ground pepper
Steam brussel sprouts and carrots until tender crisp. Put veggies in casserole dish and toss with the oil, salt, and pepper. Bake at 400 degrees for 20-30 minutes. Stir once during roasting. You could add just about any seasoning that you like to this. It is great with just salt and pepper, though. You can really taste the sweetness of the veggies. Enjoy!
