1 pound raw chicken & 1 onion cut up in chunks/strips & 1 packet fajita seasoning, prepare as directed.
You can add any cycle 1 veggies, or for cycle 2 and 3 add more.
Serve over a bed of Lettuce, tomato, onion, and top with salsa, fat free cheese, and fat-free sour cream. Add a bit of fat free french or thousand island for a zip.

I have to watch my salt, so I made fajitas a little different:
In a pan with 1T heated olive oil add 1 huge green pepper, sliced thin, a baseball-sized onion, sliced thin, and 1-2 cooked leftover chicken breasts, sliced thin. Warm until the peppers and onions wilt a bit, but still have crunch. Add a few tablespoons hot salsa just to moisten. I ate it like this on a plate, while my family ate theirs with tortillas. It was really good.

Yum. . . I added chipotle white corn and rotel diced tomato and green chilles. I used greek yogurt instead of sour cream. Delish! Thank you, I was running out of things to do with my leftover grilled chicken.

I just made this but added mushrooms and three colors of peppers. served with fat free sour cream, salsa, and low fat cheese because i couldn’t find fat free. It was delicious! Didn’t even mind that I wasn’t eating it on a tortilla. Thanks for the recipe.

I used the stop light (3 color) bell peppers too and fiesta shredded cheese. No tortilla, and yes, delicious it was, I had it this evening too. Lots of onion and two small cloves of fresh garlic.

It can be any cycle depending on what you add to it. if you stick with the chicken and onion it’s scycle one. if you add brown rice or corn it’s cycle 2, if you add a whole wheat tortilla it’s cycle 3.

i’m trying to find a low fat or fat free cheese i like can we use the light laughing cow cheese two portions has 45cal. 2.5g fat, protein 4g and 200mg sodium does anybody know if this is ok for a serving.

Wow. Never have had Chicken/Turkey Fajitas. AWEsome. Use one of each of the color of Peppers, 2 meduims onions, 1 jalapeno, – the seeds, mushrooms sliced thick, fajita seasoning, Fat free cheese, Homemade sour creame, from Lowfat buttermilk and Fat free creame cheese, (blended together untill smooth makes about 6 oz) and a small bed a lettuce. Great food
