I was lookin for something new to make and I just came across an eggplant. I decided to cut the eggplant very thin and bake it with very little olive oil on it and salt and pepper for flavor. It tasted good and was a good little twist on a veggie! I also tried it with carrots and sliced them through the middle

Thanks.  You inspired me and I just brought an eggplant home.   Did it get crispy like a chip?

the ones that i sliced almost paper thin got all crispy the others didnt. make sure you dont use too much oil though

Just pat the eggplant dry first before baking them..

I would think making them yourself is Preferrable to buying them.  They would have a lot of extra sodium and chemicals in the ingredient list that wouldn’t be there if you made them at home.   I think the idea behind the diet is to eat as little processed foods as possible.

I bought vegetable chips in the potato chip aisle. Are these legal, they are just vegetables with salt and some oil for the cooking, 160 calories for 15 chips.

deborahd, I would say they are not legal for this diet since we suppose to use healthy oils and im sure they didnt use healthy oils

what temperature should i bake them?(eggplant chips)

i make these but dip them in a little eggwhite/water mixture and press some fat free parmesean on them. put them on a cookie sheet with some sea salt (and garlic powder if you like) and bake them at 400 for about 30 minutes (turn them over at about 20).  they are YUMMY!

How do people get them to stay crispy? I have tried parsnip chips and carrot chips and they are always nice and crispy when I bake them , but the next day when I go to snack on them, they are more rubbery (still taste nice though but not what I’m after). Is there a secret to it? I bake them on a low heat with a little oil and salt and then when they are done store them in an airtight container.
