here is a recipe my family loves, and I believe by using sugar free preserves/jam it should work perfectly for this plan.
1 tsp. olive oil
cooking spray
1/2 cup chopped red onion
1/2 tsp dried thyme
1/2 tsp salt, divided
4 skinned, boned chicken breast halves
1/3 cup seedless reaspberry preserves
2 tbsp. balsamic vinegar
1/4 tsp pepper
Combine thyme and 1/4 tsp salt; sprinkle over chicken. Spray large
skillet with cooking spray, heat oil over med-high heat and add onion.
Saute for 2 minutes and add chicken. Saute 6 min on each side or until
done. Remove chicken from pan, keep warm. Reduce heat to med-low. Add
1/4 tsp salt, preserves, vinegar and pepper, stirring constantly until
preserves melt. Spoon sauce over chicken.
Serves 4.
