Experimented last night and ended up with a true WINNER!!!
UUM-UUM GOOD MEATLOAF
2 lbs. ground lean turkey
2 eggs (beaten)
1/4 cup chopped onion
2 tablespoons parsley
2 tablespoons Worchestershire Sauce
1 tsp. salt
1/2 tsp. ground sage
1/8 tsp. pepper
In a bowl, beat 2 eggs, as you add each additional ingredient, stir well. Add ground turkey last, mix well. Using a broiler pan, shape into a loaf about 2 – 3 inches thick. Bake at 350 degrees for 1 hour. This fed my family of 5 very well (2 memebers had nice 2nd helpings) and left a helping for lunch left overs.

I made this and it was so dry…I just realized I forgot about the eggs. Oh brother!!!

Fleen111…I’ve forgotten key ingredients before…try to laugh it off. :) I’m the one who came up with and posted this recipe. I’ve not experienced it being dry yet and I make it every week. I even made the recipe/mixture a couple of nights ago and made stuffed bell peppers instead of a simple meatloaf. They were delicious also.

Thanks so much for sharing this recipe. I made it last night using egg whites instead of whole eggs and added some diced red bell pepper. It was delicious!!

Used ground chicken instead of turkey for this (for some reason they didnt have turkey at the store i was shopping at) but very good recipe!

I made this for dinner tonight, and it was really good! I cut up about 1/3 of green, red, yellow, and orange bell peppers, and about 1/3 of a zuchinni. I put it in the food processor (my husband hates “chunks” of veggies), until it was about confetti sized, and then drained the excess juice. I added a little bit of Mrs Dash. I was tired, and didn’t read the directions well, so I put it in a loaf pan. Unfortunately, I forgot the Worchestershire sauce (I was really tired), so I put it on the top after it was in the pan. I covered the top of the pan with plastic wrap and put it in the fridge. Husband put it in the oven when he got home from work. It cooked for about 1.5 hours, give or take. WONDERFUL!!

I tried a similar turkey meat loaf, but added shredded parm instead of
the sage. It was great.

I do my meatloaf with a packet of french onion soup mix, chopped onions, and chopped baby spinach in. Yummy

Just purchased the ground turkey today, so will be trying this recipe tonight! Just started this diet and I do appreciate the recipes and the comments from everyone!
