The easiest way to cook a whole artichoke is to cut off the top of the leaves and make a flat bottom. Chop many cloves of garlic and stuff them in the leave pockets. drizzle olive oil over artichoke and place in the bottom of pot. Place about and inch or 2 of water and simmer with lid on until artichokes become soft (about 1 hour) My kids love them this way and they are so easy to ake.
