Here is what I had in mind. I took fresh cauliflower, broccoli, mushrooms, and a cucumber and cut them all up to marinate in fat free Italian dressing. I plan on marinating for 24 hours (is this too long?) and then dividing them up into individual packets for freezing. This way when I want to stir fry some fresh spinach I just need to add the veges that are already flavored. Does this sound good to anyone and can these veges be frozen after marinating?

Hi – Not sure about the marinating and freezing of fresh veggies.  My understanding is that you normally would blanch the veggies before freezing. I would try blanching the cauliflower and brocoli first, then try feezing one packet as a test. As far as mushrooms and cucumbers go, I believe they would be pretty much a mushy mess because of all the dressing they would soak up. 

But, believe me, I am no expert…so I would love to know how they turn out…
