I know everyone is looking for a way to enjoy fruit without eating it raw all the time.
Sometimes I want a dessert with my lunch or dinner, so I do this with the apple – golden delicious or granny smith (or your choice); I have tried the pear, but didn’t like as well.
Quarter apple and remove core. Place in casserole dish; drizzle with a little olive oil, sprinkle on 1/2 tsb each cinnamon &chili powder (optional – I like it a little spicy), juice from half lemon, 1-2 pkg. splenda or 1 pkg truvia. Bake at 350 or microwave until soft (I like mine mushy).
I only do one apple at a time because it is so good I will eat too much.

I did that, only just put cinnamon on each apple and cooked in microwave. Delicious.

Anywhere from 1 to 2 minutes depending on how you like your apples. I think 3 minutes is to long.

thanks to all of you – I have 3 tart apples in the fridge – too tart to eat and was wondering about baking them. This will do the trick – yes, 1205 Wall, only one apple at a time :)

Thanks! Great idea for apples! I peeled, cored, and sliced mine and then put them in a baking pan. I sprinkled them with Splenda and cinnamon and baked them in my toaster oven. They were a great, flavorful snack!

I ended up having mine at 2p with a dollop of Breakstone cottage cheese sprinkled with cinnamon – ummmm – thanks to whoever it was that suggested that!

I am on the second day of the 2nd cycle. Was wondering how folks are doing. I only lost 4 pounds but am diabetic and am sure I am insulin resistant. Very happy with the diet,just curious

wow! thanks, that is like a dessert. I used granny smith, cinnamon, sugar and cumin, microwave 2 minutes. Reading on now I see someone did the toaster oven, I may try it that way next time. Delish!

just fixed this and added a couple of spoons of vanilla yogurt on top – the warm apple melted it and it tastes like apple pie ala mode!

This was yummy! My version looked like this: Sliced and apple, placed in shallow baking dish, sprinkled with cinnamon. Baked until soft.
Mixed a small dollup of fat free sour cream with 1/2 tsp of agave nectar. Super Yummy! Thanks for the idea!

cshellca – yes it does sound good – picked up some apples that are too hard/tart for me to eat raw. I bought the agave nectar for the cookies but haven’t had time to make them. can’t wait to try the apples.

These are absolutely delicious. I am diabetic and have been doing this for a long time. I didn’t even think about them for this diet. Now I will try this in the morning. My husband has been wanting something different and this should do the trick.
