Baked Salmon

Ingredients
2 cloves garlic, minced
1-2 tablespoons light olive oil
1 teaspoon dried basil
1 teaspoon salt
1/2 teaspoon ground black pepper
1 tablespoon lemon juice
1 tablespoon fresh parsley, chopped
2 (6 ounce) fillets salmon
Directions
1.In a medium glass bowl, prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice and parsley. Place salmon fillets in a ziploc bag and marinate in the refrigerator about 1 hour, turning occasionally.
2.Preheat oven to 375 degrees F (190 degrees C).
3.Place fillets in aluminum foil, cover with marinade, and seal. Place sealed salmon in the glass dish, and bake 35 to 45 minutes, until easily flaked with a fork.

Thanks for the recipe…looking forward to trying it.

my fav salmon recipe is montreal steak seasoning and brown sugar sprinkled on top, baked at 400 degrees for 20 min (I believe normally it is cooked at 350, but we like it drier)  In my quest for a thinner me, I actually made this the other night without the brown sugar and it was fine! Maybe not quite as tasty, but, loved the feeling I got on the scale in the morning…definately worth giving up a little sugar!

Great recipe! I had found one just like that at allrecipes.com and my daughter and I made it night before last. I’m usually hesitant to cook fish at home, but this was extremely good!

Cut up onion and garlic, saute in a pan with about 1 TBS of olive oil. (may need to add a little water 1/2 thru). shake on some Mrs. Dash seasoning and cook on each side till done. I love it this way. It gets a harder coating than fixing in the oven. It seems mushy to me. Besides just me, that’s a lot of oven to heat up! LOL….The bad thing about it….My two cats sit and watch like hawks! LOL

We stuffed the salmon with sliced onions, lemons peices of butter (now I brush or spray) with olive oil and grind salt & pepper, wrap in foil ( I double wrap) place on a cookie sheet and cook at 350 degrees until cooked. Do not over cook salmon will be dry! This is great hot and the next day on salads, in wraps, stuffed lettuce leafs ect.. experiment and stuff with savoury, dill, or your favorite hebs, it freezes well so if you cook up a whole salmon you can portion it up and take it out when you need it!

I LOVED this! I tried oregano instead of basil and it was great as well. I may try different herbs to change it up a bit. Delicious!!
