This is delicious and easy to make. I use a “Salad Shooter” to grate the cauliflower, but you can do it with a handheld grater or use a mandolin and finely chop any slices. If you don’t like cauliflower and are afraid to try this… don’t be! I make this all the time now (thanks for the recipe!) I find that the longer I cook the cauliflower the better it tastes. We add all kinds of things to it. Roasted peppers and mushrooms are our favorite. |

Oh my word, this was soo good! I was really unsure about the cauliflower in it, but it MADE the recipe! It actually is such a great substitue for the rice, I almost liked it even better than if i’d made it WITH rice!!! I added my cauliflower when the chicken i was cooking was about halfway done. I also added chopped portabella mushrooms and at the end, I added lite soy sauce to give it flavor. YUMMY! |

WOW! I just made this tonight, so good! I added some mushrooms and a little soy sauce at the end. I also used chicken strips instead of ground turkey. I gave my husband a spoonful and said it was chicken fried rice, he said “mmm, good” and then I said, but its not rice its cauliflower and he’s eyes got huge and he said “WOW!!! That’s GREAT!” This is perfect to make up a batch and have in the fridge. Can’t wait to have it again for lunch tomorrow. Thank you!!! |

I just have to add that it totally gives you the feeling like you are indulging in a big bowl of carbs…awesome! Next time I’ll finish it with some green onions…also, I just pulsed the cauliflower in the food processor until crumbly… |

This is wonderful and just made this diet even easier!!! Thanks! I did add celery, took out the onions (I hate them) and did a splash of soya sauce. As previous posts advised I added the cauliflower earlier and it worked out great :) |

Ok so far this is my favorite recipe on this whole list – and I have tried a guap of them. This is outrageously good!!!! I did add in scallions on the finish (greens only) and just a dash of low-sodium soy sauce as it was cooking (before the eggs) to make it a little more “Chinese” but holy wow, even my husband who is not doing 17 Day was scarfing this up. How the heck did you even invent this? You’re a genius! I love to cook and love to throw things together but never in my life would I have thought of this. |
