Take 2 hard boiled eggs and mix in with a bit of salt and pepper and just a bit of mayo.. You can buy Hellmans Olive oil Mayo..
Mix everything together and pack into 2 large lettuce leaves. There ya go.. Guilt free egg salad sandwiches..

You could also use fat free or light miracle whip (15 or 25 cal/2tbsp, minimal sugar). Technically we’re not supposed to have mayo or light mayo until cycle 3, but miracle whip is considered a salad dressing. But, I made tuna and egg salad with light miracle whip and it was great.

Thank you Mamabosa for you feed back. I went out today to buy the olive oil mayo. I didn’t realize that I couldn’t have it (or should not have it) until the 3rd cycle :( bummer. I had some today in tuna with onions and celery. I added a tablspoon to a can of tune but my daughter ate half the can so I didn’t eat a lot to say I ate a lot. I hope I didn’t mess my losing pounds.

I picked up some light mayo, it had less carbs than the miricle whip did. I didn’t see a light miracle whip. I’ve only used it once….

I would like to know if anyone can find live active cottage cheese. I bought Breakstone Cottage Cheese but it does not say live active. Don’t want to stop what progress I’ve gotten so far

Just wanted to say that were not supposed to be using any mayo of any kind on cycle 1. I don’t want anybody hindering their diet. This cycle is where were going to loose the most weight, so you want to follow it as close as you can. You can use greek yogurt…I don’t know what it would taste like. I used it as sour cream on my taco salad. Our salad dressing for our salads is supposed to be oil type dressings. Hope this helps…hang in there!!!

This sounds so good right now. Egg salad — comfort food. Lettuce — crunch.

Stainglasser: I have tried the Breakstone LACC. It is great and I put fruit in it for my early morning snack! It comes in a 4-pack in the 4 oz. size, which is recommended in the book. Ask your grocer to get it. Try Safeway or Food Lion. Tell them it’s for this diet. They will realize others will be looking for it and begin to stock it. Good luck. I think you will enjoy it.

You ought to try walden farms dressings as well. 0 calories! 0 carbs! 0 sugar! mostly natural ingredients! some flavors are better than others, but i’ll be darned if their caeser wasn’t nearly identical to the full-fat kind! i get mine at sprout’s market.

I posted a flax meal bread recipe that is Cycle 1 approved. It’s great with egg salad, and tuna salad. The bread is really dense so it doesn’t take much. Makes a batch of salad go further. I’m going to have to try it with the extra lettuce crunch.

Just checked the Workbook and mayo is allowed but not until cycle 3-4.
Also I can’t find any where that is lists Flax seed meal as an approved food item, where did you find the information?

Mayo is just emulsified oil, plus egg and a little vinegar or lemon juice. I would substitute it for one of the tablespoons of allowed friendly fats, if it was made from either olive or flax seed oil.
