I found this recipe on Allrecipes. I have not tried it yet but I will soon. It is a good alternative to stuffed peppers with beef and rice. Not sure we can have zucchini (maybe substitute eggplant). This is two servings. For 4 just double the recipe.
Stuffed Peppers with Turkey and Vegetables
Ingredients
• 2 green bell peppers, tops removed, seeded
• 1/2 pound ground turkey
• 1 tablespoon olive oil
• 1/4 onion, chopped
• 1/2 cup sliced mushrooms
• 1/2 zucchini, chopped (sub eggplant)
• 1/4 red bell pepper, chopped
• 1/4 yellow bell pepper, chopped
• 1/2 cup fresh spinach
• 1/2 (14.5 ounce) can diced tomatoes, drained
• 1-1/2 teaspoons tomato paste
• Italian seasoning to taste
• garlic powder to taste
• salt and pepper to taste
Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. Wrap the green bell peppers in aluminum foil, and place in a baking dish. Bake 15 minutes in the preheated oven. Remove from heat.
3.In a skillet over medium heat, cook the turkey until evenly brown. Set aside. Heat oil in the skillet, and cook onion, mushrooms, zucchini, red bell pepper, yellow bell pepper, and spinach until tender. Return turkey to the skillet. Mix in the tomatoes and tomato paste, and season with Italian seasoning, garlic powder, salt, and pepper. Stuff the green peppers with the skillet mixture.
4.Return peppers to the oven, and continue cooking 15 minutes.

I am excited to try this. I love stuffed peppers. I hope this is as good. Once on cycle 2, I’ll be making them with brown rice. =)

I tried this dish last night & loved it!! I don’t eat zucchini so that was not a problem for me to miss lol It was simple and the diretions were easy to follow! I never cooked before this diet, my mom did all the cooking so this was a great recipe :)

i had this tonight, well actually me and my husband had this tonight! it was great!! although i butchered the recipe because i didnt have a lot of the ingredients but it tasted great…this is what i did instead..
i didnt have green bell peppers so i used red instead…had them :)
dont like mushrooms so i used watercress instead
didnt have zucchini so i used red cabbage instead
didnt have spinach so added extra cabbage instead
i had everything else…even with all the swaps, it was soooo good! my husband had 2 halves and i had 1 so i have 1 left for lunch tomorrow!
my husband didnt want me to make them because we didnt have all the stuff on hand. he was happy at the outcome. it just goes to show that if you use your imagination then you can substitute and make things taste great!

I just made this but I left out the zucchini since I didn’t have any. It was great, I loved it!
