1/2 chopped onion 1/2 chopped red bell pepper 2 cloves garlic 1 Tbs. olive oil salt, pepper,thyme or any herbs 1 cup shredded fat free cheese mozzerella grated parmesan 2-3 large portabello mushrooms
saute onion,red bellpepper in oil then season with salt,pepper & thyme, stuff mushrooms then sprinkle with cheeses. Bake 400 for 15-20 minutes

I love this idea. our local grocery store makes something similiar. stuff the huge portobella mushroom caps with spinach and fat free feta, a little seasonings and grill with a little olive oil on bottom, sooo good
