I just got this in an email from Hungry Girl. Haven’t tried it but it sounds quick, easy and tasty! You would need to substitute the cheese for a fat free version or go cheese free. It would also be easy enough to change the apples to some of your favorite “legal” veggies for a quick easy breakfast.

Sweet Cheese ’n Apple iMug
PER SERVING (entire recipe): 188 calories, 3g fat, 506mg sodium, 15g carbs, 2g fiber, 9.5g sugars, 24.5g protein — PointsPlus™ value 4*

A few of our favorites jumped into a mug together, and DELICIOUSNESS ensued…

Ingredients:

1/3 Fuji apple, cored and chopped
1/4 cup chopped sweet onion
3/4 cup fat-free liquid egg substitute (like Egg Beaters Original)
1 piece Mini Babybel Light cheese, chopped
Optional: salt, black pepper, garlic powder

Directions:
Spray a large microwave-safe mug with nonstick spray. Add chopped apple and onion and microwave for 1 minute, until slightly softened and warm.

Pat dry to remove excess moisture. Add egg substitute and gently stir. Microwave for 1 1/2 minutes.

Add cheese and gently stir. Microwave for about 1 minute, until scramble is set.

Mix well and, if you like, season to taste with salt, pepper, and garlic powder. Enjoy!

These are yummy! Not a bad substitute when you can’t use a skillet. Just don’t over cook it or they get rubbery. I have made several different types of omlettes this way.

Also you can use regular eggs you just have to be sure you mix them up. At least break the yolks well. Otherwise they can explode. LOL (I add a bit of water or milk to thin a bit)

Glad you enjoyed them. There’s a limit of the number of yolks per week is the reason for the egg substitute. I use the cartons of egg whites. Super fast, easy and good! Can’t beat that combo.!

‘Just wanted to make sure you knew that if you have NO cholesterol problem, there is no limit on the yolks per week — that’s just for those with cholesterol problems.

Does anyone know if mini babybell light cheese is allowed? Cause I have 2 packages of it from being on my other diet and I haven’t touched it the past few days cause I thought we were only allowed to have fat free cheese.
