In a large frying pan heat 1 tablespoon of Olive Oil. Cook 4 or 5 chicken breasts until lightly browned on both sides. While chicken is browning, in a bowl mix about 1 cup of low sodium chicken broth, the juice & zest of one lemon & a teaspoon of Rosemary (or another spice if you don’t like Rosemary) & ground pepper. Pour mixture over chicken, cover & let cook for about 30 minutes or until chicken is cooked through.
