I made this last night – I really enjoyed. My husband ate it all, but said I didn’t have to make it again for him – but he’s a straight meat/potatoes guy, and doesn’t need to diet. 2 1/2 – 2 2/3 lbs lean ground turkey; 1 ten oz box frozen chopped spinach, thawed; 1/2 medium onion, finely chopped or grated; 3 garlic cloves, chopped or grated; 1 large egg or egg white; 3/4 cup ff grated parm cheese; coarse salt and freshly ground pepper; EVOO for drizzling. Directions – preheat oven to 400 degrees. Wring spinach dry in a kitchen towel. Place the ground turkey in a large bowl and make well in the center. Add the spinach, onion, garlic, egg, parm cheese, and season with salt and pepper. (make sure to salt well; add additional seasoning if preferred, like Montreal Steak grill seasoning). Mix until combined, then form turkey mixture into 12 large balls. Arrange on nonstick baking sheet and drizzle or brush with EVOO. Roast for 25 minutes, or until cooked through.
Serve with marinara.

Extra virgin olive oil. I sprinkled a little parmessan cheese on top to serve too.

EVOO is extra-virgin olive oil. This sounds like a really good recipe colasc – anxious to try it! When I get to cycle 4 I’ll try it with whole wheat spaghetti!

I am making this for dinner tonight, along with garlic stuffed cocktail tomatoes drizzled in olive oil and lemon juice, topped with Italian herbs and Parmesean cheese; served with steamed spinach with mushrooms and fresh garlic.
