This recipe was posted by “weezi” I came across it last week and planned on trying it soon. In a pinch last week I bought a can of organic diced roasted tomatoes. I added chopped garlic, chopped green onion, chicken stock, basil, salt and pepper. Gave it a quick whirl in the food processor thenI brought it to a boil then simmered for about 20 minutes. I found it very tasty. Definitely nevery going back to “canned” tomato soup. Hope this is what you were looking for.
Roast 3 lbs roma tomatoes w/2 tbsp olive oil, salt and pepper to taste
roast for 45 mins 400 degree oven
Saute:: 1 1/2 c onion chopped
6 cloves garlic
1 tbsp red pepper flakes
1 tbsp chopped thyme
1-2 tbsp basil
1 large can crushed tomatoes
add in the roasted tomatoe
1 qt chicken stock (fat free)
Bring to a boil-then lower heat simmer 45 mins adjust your seasonings—-then put in food procsser or blender until smooth
This is a wonderful soup, makes 4 qts this can even be frozen
