I made this last night and everyone who ate it loved it.(I’m gonna eat leftovers for lunch!)
4 filets of tilapia
14 1/2 oz. can itilian stewed tomatoes
4 mushrooms, washed and sliced
1/2 white onion, sliced
3+ cloves of garlic (I love garlic so I use lots!)
spanich→couple cups or more?(it shrinks and a “free” vegi, so use what you like?)
Cover fry pan with “spray” oil, saute onion, mushroom and garlic. Add stewed tomatoes, fish, cook for a few minutes then put spinach on top and cover. Just cook long enough for spinach to wilt.
I just made this up, have to say it came out very yummmmy and I wil be eating it again soon. Tilapia is very thin and does not take very long to cook so this is good for one of those nights when you get home late! I think you could this with chicken too…Maybe cook partly on George Forman and add in place of fish!

Thanks for this califgal! I am always looking for more tilapia recipes. Especially anything with tomato in it. Reminds me of bouillabaisse, which I love. I may add a bay leaf while it simmers. This sounds yummy!

Before I started this program, I was not a big fish eater unless it was deep fried. So eating fish has been a challenge. Thanks for the recipe. Sounds yummy. I’m going to try it soon.
