I use orange cauliflower and steam it until very soft, smash it with a hand masher, add some non-fat yogurt & the same seasonings as you do. Very good and the color is wonderful!
We do this a lot, too. I usually add FF sour cream, some FF sharp cheddar cheese, garlic powder, and salt and pepper. It is more like “garlic-cheese mashed potatoes”…..yummy! We actually made this before we started the diet!
I have tried this a couple of times, even put the cauliflower through a food processor to get it smoother the second time, and I just cannot take the texture. I love all of the other cauliflower recipes I’ve tried but I just can’t get this one. I’ve tried adding ff sour cream, ff cheddar cheese, garlic, all the good stuff I love in my mashed potatoes and nothing seems to help. Does anyone have any advice about getting the smooth texture of mashed potatoes?
i’ve never made this recipe with sour cream. we use FF cream cheese, a little milk (FF or 1% would do), and some type of cheese – parm, mozz – anything you have, FF of course.
I thik milk will smooth it out for a different consistency.
