Have not tried this yet but it looks interesting

  • 1 head cauliflower or 1 head equal amount of pre-cut commercially prepped

    cauliflower
  • 4 tablespoons olive oil
  • 1 teaspoon salt, to taste

  • 1 Preheat oven to 425 degrees.

  • 2 Trim the head of cauliflower, discarding the core and thick stems; cut florets into pieces about the size of ping-pong balls.

  • 3 In a large bowl, combine the olive oil and salt, whisk, then add the cauliflower pieces and toss thoroughly.

  • 4 Line a baking sheet with parchment for easy
    cleanup (you can skip that, if you don’t have any) then spread the
    cauliflower pieces on the sheet and roast for 1 hour, turning 3 or 4
    times, until most of each piece has turned golden brown.

  • 5 (The browner the cauliflower pieces turn, the more caramelization occurs and the sweeter they’ll taste).

  • 6 Serve immediately and enjoy!

    This recipe is awesome — I just made it and it does not even taste like cauliflower. Be careful not to make pieces too small as they burn.

    created on: 03/20/11I don’t know if I did this right.. trying to insert a photo of the cauliflower… this is what mine looked like and it was delicious, a bit crispy…and a definite keeper.. I LOVED IT.

    This was delicious. I made my pieces too small, because I already had some cut-up. Still worked, they just cooked faster. We already had a tablespoon of olive oil today, so I reduced it to 3 tbps and worked fine. Thanks for sharing!! It totally hit the spot while watching a movie with the kids, while they had the real stuff.

    Just made this and used less than half the oil and it was perfect. It was SOOO good!

    I read all the comments on this recipe, and I’m going to try it even though I absolutely, positively hate cauliflower.  Lomadome’s comment about how it doesn’t even taste like cauliflower really makes me want to try it.  Thanks.

    I made this tonight with a package of frozen cauliflower. I thawed it in the microwave and then followed the above directions, except I only roasted mine for 35 minutes, stirring a couple of times. IT WAS DELICIOUS! My 17 year old son loved it; thanks for posting!

    I finally tried this recipe, and I absolutely loved it!  I made it two ways: 1.  with rosemary/garlic seasoning (Sam’s), and 2. garlic salt.  They were great both ways!  In case I didn’t make it known in my previous post, I HATE HATE HATE cauliflower, but I LOVE it this way!  The browner it gets, the better it tastes.  Thanks for the recipe, hgulden!       Stilljojo – that’s a great photograph!

    mastergardner – you have inspired me! I, too, HATE cauliflower but I figure if someone who hates it as much as I do can enjoy this, then it’s worth a try! Heck, I may even be able to get my kids to eat cauliflower like this!

    I was wondering, what might happen if I added a little Truvia into the mix, do you think it might taste like kettle corn? I LOVE kettle corn and would be so excite to find something similar on this diet!

    Ooooooooooo…..I’ll definately have to try this! PaulaMarie3643, how was the texture after it was cooked since you used the frozen cauliflower? Did it still come out crispy?

    This was great!! I just made it, using frozen cauliflower, and it was super filling and felt like I was “snacking”. I’ll be making it again soon!

    I just made this last night. The flavor was good. I added a little garlic and onion powder. I think next time though I will cut it into much smaller pieces to have more of a crispiness. The tiny pieces that were in there were especially flavorful and crunchy, like a real snack.

    I tried it and it was good but it wasn’t as snacky as I was hoping! It wasn’t as crispy and crunchy as I thought it might be. I would have cooked it longer but my apartment was getting smoky because the tiny ones burnt up. Next time I think I’ll cut smaller pieces and try to cook it a little longer.

    I eat this almost every night as a snack. probably go a little too heavy on the parmesan. But its good.  I do 45 minutes. Some of the smaller peices are really crisp while the bigger ones not as much. BUt its definitely good

    I just tried this as a mid-day snack.  Delicious!!  I also added broccoli. The broccoli doesn’t take as long to cook as the cauliflower but it was delicious too and the flourettes had a nice crunch to them.  I added seasoned salt and garlic salt.  Thanks for the recipe.  I’m actually on Day 21, but want to make sure I have lost 10 lbs before going onto C2.  I’m 1/2 lb away.
