Vegetarian Cheese Omelet :
Ingredients:
2 eggs
1 medium onion
Green pepper or 2 stalks of celery chopped fine (which ever you have on hand)
Half cup chopped mushrooms
2 tbsp olive oil
1 oz 75% fat free cheddar cheese thinly sliced
Salt and pepper

Fry the onion, green peppers and the chopped mushrooms in the olive oil until caramelized. Whisk the two eggs in a separate bowl adding salt and pepper. Add the eggs to the frying pan. Add cheese. Flip the omelet over. It may break a little. Very tasty and filling.
