2 cucumbers peeled & halved lengthwise, seeded and thinly sliced crosswise
1/2 small red onion, thinly sliced in rings or slivers
1 large red bell pepper cut in thin julienne strips
1 carrot cut in thin julienne strips
1/4 c rice wine vinegar
2 packets Truvia
1 TBS fresh coriander or 1/2 tsp dried
1/2 tsp crushed red pepper flakes
salt and pepper
Combine all the ingredients in a large bowl and toss well. Could also add fresh mint if you like.
