I was trying to figure out what to do with my minced chicken, so this is what I came up with
3 peppers halved and blanched (5mins)
1 lb minced chicken or turkey
1 grated carrot
6 mushrooms chopped small
3 shallots chopped
Brown all in non stick pan add in garlic powder,chili powder, cumin,pepper,salt,paprika,parsley,tabasco
about 1tsp of each except for salt
at the end of browning add 1 tbls low fat parmesan cheese
fill pepper halves pour about 1 cup of tomato juice around them and a little over top
bake at 350 for about 1/2hr
