This is my favorite meatball recipe that I converted for Cycle 1. Makes 12 meatball
1 lb ground turkey
oregano, basil, garlic, parsley — spices to taste — I use 1/2 – 1 tsp each
1 egg
1/2 6 oz can of tomato sauce
1/4 cup parmesan cheese
finely chopped green pepper and onions
(1/2 cup uncooked oatmeal for cycle 2)
Mix everything together shape into balls (I make them from a mounded 1 T measure.
Best to cook in 2 TB olive oil in sear pan on med high heat.
Make sure the oil is heated first.
I really cook the heck out of these – externally almost burrnt (very dark brown) inside will still be juicy. It’s difficult to tell when the turkey is fully cooked so don’t skimp on the cooking. By making these meatbals “crunchy” on the outside like a well done hamburger off the grill, you get a great texture and a real sense of eating. Drizzle with appropriate ketchup, tomato sauce or marinara and parmesan.
My husband and I live on these … 4-5 with a great tossed salad and you willl feel like you ate a real meal.
